You won't find this in a cookbook..... but it's sooooo good.1. Soak white beans overnight. (I like great northern but navy beans are ok too)
2. Drain off soaking water and add fresh water, just enough to cover the beans.
3. Add olive oil, salt, fresh garlic, and plenty of oregano.
4. Simmer for about 1 hour or until the beans are tender.
5. Squeeze in lemon juice and serve with crusty bread.
Sorry, I didn't include measurements because I don't use them. You'll have to use your instincts. I cook that way.....probably because I'm GREEK
