You will need:
4 oz. sweet baking chocolate
2 tablespoons milk
1/4 cup sugar
3/4 cup butter
2 tablespoons vanilla
2 cups all purpose flour
1/4 teaspoon salt
and 1 tube almond paste (3 1/2-oz) found in the baking eisle of the supermarket.
Heat oven at 350F for 10 minutes.
Work:
In a small saucepan over low heat, melt the chocolate in milk, stirring occasionally untill smooth.
In a large bowl, beat the sugar and the butter untill light and fluffy.
Blend in, the chocolate mix and the vanilla.
Stir in the flour and salt; now mix well.
Using a teaspoon, scoop out rounded portions and shape in to balls, placing them on a greased cookie sheet about 2 inches apart from the next one. Make dent in the middle of each cookie and fill the hole with almond paste. Then gently close the hole around the filling.
Bake at 350F for about 12 minutes or until inserted toothpick comes out clean. remove from cookie sheet and roll in sugar if you like, let the cookies cool completely.
Makes 4 dozen balls/cookies
